White pepper is obtained by removing the darker-colored flesh from the peppercorns leaving only the seed of the fruit. This brings a subtle change in the taste and flavor of the white peppercorns when compared with black pepper. It is mostly used in Chinese and Thai cuisines and is also preferred in many Portuguese dishes.
