Organic Kuzu (also known as Kudzu) is a superior quality starch thickener made from the Kuzu Pueraria lobata roots. Kuzu has been used in Japan for more than a thousand years. It is an ideal thickener for soups, stews, sauces and can also be used for puddings, glazes, pie fillings, and many other desserts. To prepare for use, dissolve one tablespoon of Kuzu in one cup of cold liquid then stir over low heat until it becomes thick and translucent.
